  1. 1.In a large bowl, mash the black beans with a fork or potato masher.
  2. 2.Add the quinoa, grated carrot, grated zucchini, chopped onion, chopped parsley, breadcrumbs, egg, salt, and black pepper to the bowl with the black beans. Mix well.
  3. 3.Form the mixture into 4 patties.
  4. 4.Heat a large skillet over medium heat. Add the patties and cook for 3-4 minutes per side, or until browned and crispy.
  5. 5.In a small bowl, mix together the mayonnaise and sriracha.
  6. 6.To assemble the burgers, spread the spicy mayo on the bottom half of each bun. Top with a veggie patty, sliced avocado, and sliced tomato. Serve immediately.
