- 1.In a large bowl, mash the black beans with a fork or potato masher.
- 2.Add the quinoa, grated carrot, grated zucchini, chopped onion, chopped parsley, breadcrumbs, egg, salt, and black pepper to the bowl with the black beans. Mix well.
- 3.Form the mixture into 4 patties.
- 4.Heat a large skillet over medium heat. Add the patties and cook for 3-4 minutes per side, or until browned and crispy.
- 5.In a small bowl, mix together the mayonnaise and sriracha.
- 6.To assemble the burgers, spread the spicy mayo on the bottom half of each bun. Top with a veggie patty, sliced avocado, and sliced tomato. Serve immediately.
