- 1.Heat the oil in a large pot over medium heat. Add the onion, garlic, and ginger and sauté until the onion is translucent, about 5 minutes.
- 2.Add the tomato paste, crushed tomatoes, vegetable broth, red bell pepper, green bell pepper, scotch bonnet pepper, paprika, curry powder, thyme, salt, and black pepper to the pot and stir well.
- 3.Add the rice to the pot and stir well to combine. Bring the mixture to a boil, then reduce the heat to low and cover the pot.
- 4.Cook the rice for 25 minutes, then add the water and stir well. Cover the pot again and cook for an additional 10-15 minutes, or until the rice is cooked through and the liquid is absorbed.
- 5.Fluff the rice with a fork and serve hot.
