  1. 1.Preheat your oven to 300°F and line a baking sheet with parchment paper.
  2. 2.In a large mixing bowl, beat the aquafaba with an electric mixer until stiff peaks form. Gradually add the sugar and continue to beat until the mixture is glossy and holds stiff peaks.
  3. 3.Fold in the sifted almond flour in three parts, being careful not to overmix.
  4. 4.Transfer the mixture to a piping bag and pipe small circles onto the prepared baking sheet.
  5. 5.Tap the baking sheet on the counter a few times to release any air bubbles, then let the macarons sit at room temperature for 30 minutes to form a skin.
  6. 6.Bake for 20 minutes, then let cool completely on the baking sheet.
  7. 7.Once cool, fill the macarons with your favorite vegan buttercream and sandwich together.
