- 1.In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and set aside.
- 2.In the same skillet, add the sliced red onion and cook until softened and slightly caramelized. Remove from the skillet and set aside.
- 3.In a small bowl, whisk together the beaten eggs, grated Parmesan cheese, and black pepper.
- 4.Cook the truffle pasta according to the package instructions. Drain the pasta, reserving 1/4 cup of the cooking water.
- 5.Return the drained pasta to the pot and immediately add the beaten egg mixture. Toss well to coat the pasta evenly.
- 6.Add the reserved cooking water to the pot and continue to toss the pasta for 1-2 minutes, until the sauce thickens slightly.
- 7.Crumble the cooked bacon and sprinkle it over the pasta. Add the caramelized red onion. Toss again to combine.
- 8.Serve the truffle pasta carbonara with red onion hot, garnished with fresh parsley.
