  1. 1.In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and set aside.
  2. 2.In the same skillet, add the sliced red onion and cook until softened and slightly caramelized. Remove from the skillet and set aside.
  3. 3.In a small bowl, whisk together the beaten eggs, grated Parmesan cheese, and black pepper.
  4. 4.Cook the truffle pasta according to the package instructions. Drain the pasta, reserving 1/4 cup of the cooking water.
  5. 5.Return the drained pasta to the pot and immediately add the beaten egg mixture. Toss well to coat the pasta evenly.
  6. 6.Add the reserved cooking water to the pot and continue to toss the pasta for 1-2 minutes, until the sauce thickens slightly.
  7. 7.Crumble the cooked bacon and sprinkle it over the pasta. Add the caramelized red onion. Toss again to combine.
  8. 8.Serve the truffle pasta carbonara with red onion hot, garnished with fresh parsley.
