- 1.In a large pot, bring 8 cups of water to a boil. Add the kombu and shiitake mushrooms and let simmer for 10 minutes.
- 2.Remove the kombu and mushrooms from the pot and discard. Add the ramen noodles to the pot and cook for 3 minutes.
- 3.In a small bowl, whisk together the soy sauce, mirin, sesame oil, and sriracha.
- 4.Divide the noodles and broth between four bowls. Top with bok choy, bean sprouts, green onions, and the soy sauce mixture.
