  1. 1.Preheat the oven to 375°F.
  2. 2.Place the pork bones on a baking sheet and roast for 45 minutes.
  3. 3.In a large pot, add the roasted pork bones, garlic, ginger, soy sauce, mirin, sake, and enough water to cover the bones. Bring to a boil and then reduce heat to low and let simmer for 3 hours.
  4. 4.Remove the bones and strain the broth through a fine mesh strainer.
  5. 5.In a separate pot, boil the ramen noodles according to package instructions.
  6. 6.In a skillet, cook the pork belly until crispy and golden brown.
  7. 7.To assemble the bowls, add the ramen noodles to each bowl and pour the broth over the noodles. Top with the sliced pork belly, soft-boiled egg, green onions, nori sheets, and wood ear mushrooms. Serve hot.
