- 1.Preheat the oven to 375°F.
- 2.Place the pork bones on a baking sheet and roast for 45 minutes.
- 3.In a large pot, add the roasted pork bones, garlic, ginger, soy sauce, mirin, sake, and enough water to cover the bones. Bring to a boil and then reduce heat to low and let simmer for 3 hours.
- 4.Remove the bones and strain the broth through a fine mesh strainer.
- 5.In a separate pot, boil the ramen noodles according to package instructions.
- 6.In a skillet, cook the pork belly until crispy and golden brown.
- 7.To assemble the bowls, add the ramen noodles to each bowl and pour the broth over the noodles. Top with the sliced pork belly, soft-boiled egg, green onions, nori sheets, and wood ear mushrooms. Serve hot.
