- 1.In a bowl, combine the chicken strips with half of the smoked paprika, half of the cumin, salt, and black pepper. Toss to coat the chicken evenly.
- 2.Heat olive oil in a large skillet over medium-high heat. Add the chicken strips and cook until browned and cooked through, about 5 minutes. Remove the chicken from the skillet and set aside.
- 3.In the same skillet, add the diced onion, minced garlic, and diced red bell pepper. Sauté until the vegetables are tender, about 5 minutes.
- 4.Add the sliced zucchini to the skillet and cook for an additional 3 minutes.
- 5.Stir in the remaining smoked paprika and cumin, coconut milk, and peanut butter. Cook until the sauce is heated through and well combined, about 2 minutes.
- 6.Add the cooked spaghetti and cooked chicken to the skillet. Toss everything together until the pasta and chicken are coated in the sauce.
- 7.Remove from heat and stir in the lime juice and chopped cilantro. Season with salt and black pepper to taste.
