  1. 1.In a bowl, combine the chicken strips with half of the smoked paprika, half of the cumin, salt, and black pepper. Toss to coat the chicken evenly.
  2. 2.Heat olive oil in a large skillet over medium-high heat. Add the chicken strips and cook until browned and cooked through, about 5 minutes. Remove the chicken from the skillet and set aside.
  3. 3.In the same skillet, add the diced onion, minced garlic, and diced red bell pepper. Sauté until the vegetables are tender, about 5 minutes.

  5. 5.Stir in the remaining smoked paprika and cumin, coconut milk, and peanut butter. Cook until the sauce is heated through and well combined, about 2 minutes.
