- 1.In a small bowl, whisk together the soy sauce, rice vinegar, chili oil, brown sugar, and garlic.
 - 2.In a large nonstick skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the tofu and cook until golden brown and crispy, about 5-7 minutes. Remove from the skillet and set aside.
 - 3.In the same skillet, add another tablespoon of vegetable oil and the ground Szechuan peppercorns. Cook for 30 seconds, then add the sauce and bring to a simmer.
 - 4.Add the cooked noodles and tofu to the skillet and toss to coat in the sauce. Cook for 1-2 minutes, until heated through.
 - 5.Serve hot, garnished with sliced scallions and chopped cilantro.
