- 1.In a large bowl, mix together the chicken, berbere spice blend, garlic, ginger, and salt. Cover and refrigerate for at least 1 hour or overnight.
- 2.In a large pot or Dutch oven, heat the oil over medium heat. Add the onion and cook until softened, about 5 minutes. Add the tomato paste and cook for another 2 minutes.
- 3.Add the chicken and any marinade to the pot and cook until browned on all sides, about 5 minutes. Add the chicken broth and bring to a simmer.
- 4.Reduce the heat to low and cover the pot. Cook for 45 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened.
- 5.Serve the doro wat with injera or rice.
