- 1.In a large pot or Dutch oven, heat some oil over medium-high heat.
- 2.Add the rattlesnake meat and cook until browned on all sides.
- 3.Remove the meat and set aside.
- 4.Add the onion, bell pepper, and garlic to the pot and cook until softened.
- 5.Stir in the chili powder, cumin, oregano, salt, and black pepper and cook for another minute.
- 6.Add the diced tomatoes, beef broth, and kidney beans to the pot and bring to a boil.
- 7.Reduce the heat and simmer for 1 hour, stirring occasionally.
- 8.Add the cooked rattlesnake meat back to the pot and simmer for another 30 minutes.
