- 1.In a large bowl, mix together the masa harina and warm water until a soft dough forms.
- 2.Roll the dough into golf ball-sized balls and use your fingers to press a well into the center of each ball.
- 3.Fill each well with your desired filling (refried beans and cheese, cheese and loroco, or pork and cheese).
- 4.Fold the dough over the filling and use your hands to flatten the ball into a disc.
- 5.Heat a skillet over medium-high heat and cook the pupusas for 2-3 minutes on each side, until golden brown and crispy.
- 6.Serve hot with curtido and tomato salsa.

- If you don't have loroco, you can substitute chopped spinach or chard.
- Make sure your filling isn't too wet or it may leak out of the pupusa while cooking.
