My best friend growing up was Russian. Her grandmother used to make a big pot of rice with tomatoes in it(whole tomatoes).It was the most simple yet delicious thing I’ve ever had. I tried to re-create it but I’ve never been able to get it right any ideas????

- 1.In a medium saucepan, heat olive oil over medium heat. Add minced garlic and cook until fragrant.
- 2.Add rice to the saucepan and stir to coat with the oil and garlic.
- 3.Add the can of whole peeled tomatoes and vegetable broth to the saucepan and stir to combine.
- 4.Bring the mixture to a boil, then reduce heat to low and simmer for 20-25 minutes or until the rice is cooked and the liquid has been absorbed.
- 5.Fluff the rice with a fork and serve hot.
