Russian Tomato Rice

My best friend growing up was Russian. Her grandmother used to make a big pot of rice with tomatoes in it(whole tomatoes).It was the most simple yet delicious thing I’ve ever had. I tried to re-create it but I’ve never been able to get it right any ideas????

  1. 1.In a medium saucepan, heat olive oil over medium heat. Add minced garlic and cook until fragrant.
  2. 2.Add rice to the saucepan and stir to coat with the oil and garlic.
  3. 3.Add the can of whole peeled tomatoes and vegetable broth to the saucepan and stir to combine.
  4. 4.Bring the mixture to a boil, then reduce heat to low and simmer for 20-25 minutes or until the rice is cooked and the liquid has been absorbed.
  5. 5.Fluff the rice with a fork and serve hot.
