  1. 1.Place the washed potatoes in a large pot and add enough water to cover them.

  4. 4.While the potatoes are cooking, prepare the Mojo Sauce by combining all the ingredients in a blender or food processor. Blend until smooth.
  5. 5.Once the potatoes are cooked, drain them and return them to the pot. Place the pot back on the stove over low heat to allow any remaining moisture to evaporate, giving the potatoes their signature wrinkled appearance.
