- 1.Place the washed potatoes in a large pot and add enough water to cover them.
- 2.Add the coarse sea salt to the pot and bring it to a boil.
- 3.Reduce the heat to medium and let the potatoes cook for about 20-25 minutes, or until they are tender when pierced with a fork.
- 4.While the potatoes are cooking, prepare the Mojo Sauce by combining all the ingredients in a blender or food processor. Blend until smooth.
- 5.Once the potatoes are cooked, drain them and return them to the pot. Place the pot back on the stove over low heat to allow any remaining moisture to evaporate, giving the potatoes their signature wrinkled appearance.
- 6.Serve the Papas Arrugadas with the Mojo Sauce on the side for dipping. Enjoy!
lightbulb_outline Tips
- For an extra burst of flavor, sprinkle some fresh chopped cilantro or parsley over the potatoes before serving.
- If you can't find small potatoes, you can use larger ones and cut them into bite-sized pieces.
- Feel free to adjust the spiciness of the Mojo Sauce by adding more or less chili pepper according to your taste.
