- 1.Preheat oven to 350°F.
- 2.Season rabbit pieces with salt and pepper. In a large Dutch oven or heavy pot, heat olive oil over medium-high heat. Add rabbit pieces and brown on all sides, about 8 minutes. Remove rabbit and set aside.
- 3.Add onion, eggplant, and zucchini to the pot and cook until softened, about 5 minutes. Add garlic and cook for another minute.
- 4.Add tomato paste and cook for 2-3 minutes, stirring constantly.
