- 1.Preheat the oven to 400°F. Roll out the puff pastry on a floured surface and cut into 4 squares. Place on a baking sheet and bake for 15-20 minutes, until golden brown.
- 2.Meanwhile, melt the butter in a large skillet over medium heat. Add the shallots and cook until softened, about 2-3 minutes.
- 3.Add the flour and cook for 1 minute, stirring constantly.
- 4.Slowly whisk in the half-and-half and chicken broth, and cook until the mixture thickens, about 5-7 minutes.
- 5.Stir in the brandy and cayenne pepper, and cook for 1-2 minutes.
- 6.Add the lobster meat and cook until heated through, about 2-3 minutes.
- 7.To serve, place a puff pastry square on each plate and spoon the lobster Newburg over the top.
