  1. 1.In a large pot, heat the oil over medium heat. Add the onions and cook until golden brown.
  2. 2.Add the garlic, ginger, and spices and cook for 1-2 minutes until fragrant.
  3. 3.Add the meat and cook until browned on all sides.
  4. 4.Add enough water to cover the meat and bring to a boil. Reduce heat and simmer for 30-40 minutes until the meat is tender.
  5. 5.Remove the meat from the pot and set aside. Add the rice to the pot and stir to coat in the remaining broth.
  6. 6.Add more water if necessary to cover the rice. Bring to a boil, then reduce heat and simmer for 20-25 minutes until the rice is cooked.
  7. 7.In a separate pan, sauté the chopped tomatoes and cucumbers until soft. Season with salt and pepper to taste.
  8. 8.Serve the Machboos with the caramelized onions and tomato and cucumber salad on the side.
