- 1.In a large pot, heat the oil over medium heat. Add the onions and cook until golden brown.
- 2.Add the garlic, ginger, and spices and cook for 1-2 minutes until fragrant.
- 3.Add the meat and cook until browned on all sides.
- 4.Add enough water to cover the meat and bring to a boil. Reduce heat and simmer for 30-40 minutes until the meat is tender.
- 5.Remove the meat from the pot and set aside. Add the rice to the pot and stir to coat in the remaining broth.
- 6.Add more water if necessary to cover the rice. Bring to a boil, then reduce heat and simmer for 20-25 minutes until the rice is cooked.
- 7.In a separate pan, sauté the chopped tomatoes and cucumbers until soft. Season with salt and pepper to taste.
- 8.Serve the Machboos with the caramelized onions and tomato and cucumber salad on the side.
