- 1.Heat the vegetable oil in a large pot over medium heat.
- 2.Add the onion, garlic, and ginger and sauté until softened, about 5 minutes.
- 3.Add the gochugaru and sauté for another minute.
- 4.Add the vegetable broth and doenjang and bring to a boil.
- 5.Reduce the heat and simmer for 15 minutes.
- 6.Add the tofu, mushrooms, and spinach and simmer for another 10 minutes.
- 7.Serve hot, garnished with green onions.
