- 1.In a large bowl, whisk together the soy sauce, brown sugar, garlic, and ginger. Add the sliced beef and toss to coat. Marinate for at least 2 hours or overnight.
- 2.Heat a grill or grill pan over high heat. Grill the beef for 2-3 minutes per side, until caramelized and cooked through.
- 3.To assemble the tacos, place some of the beef on a tortilla and top with chopped kimchi, cilantro, and a drizzle of sriracha mayo. Fold in half and enjoy!
