- 1.In a large bowl, combine the curry powder, allspice, thyme, garlic, and ginger. Add the goat meat and toss to coat.
- 2.In a large Dutch oven or heavy-bottomed pot, heat some oil over medium-high heat. Add the onion and cook until softened, about 5 minutes.
- 3.Add the goat meat and brown on all sides, about 5 minutes.
- 4.Add the potatoes, carrots, chicken broth, coconut milk, and scotch bonnet pepper. Bring to a boil, then reduce heat and simmer for 2-2.5 hours, or until the goat meat is tender and the sauce has thickened.
