- 1.In a large bowl, mix the flour and salt together. Add the cold butter and use your hands to mix until the mixture resembles coarse crumbs.
- 2.Add the water and mix until the dough comes together. Divide the dough into 8 equal pieces and form them into disks. Wrap each disk in plastic wrap and refrigerate for at least 30 minutes.
- 3.In a large skillet, cook the ground beef over medium heat until browned. Add the onion and garlic and cook until the onion is translucent.
- 4.Add the Jamaican curry powder, thyme, cumin, paprika, salt, and pepper to the skillet and stir to combine. Add 1/4 cup of water to the skillet and stir to combine. Reduce the heat to low and simmer for 10 minutes.
- 5.Preheat the oven to 375°F. Remove the dough disks from the refrigerator and roll each one out into a 6-inch circle. Spoon 2-3 tablespoons of the beef mixture onto one half of each circle. Fold the other half of the dough over the filling and crimp the edges to seal.
- 6.Bake the patties for 25-30 minutes, or until the crust is golden brown. Serve hot with a side of rice and peas.
