- 1.In a large pot or Dutch oven, brown the beef over medium-high heat. Add the lemongrass, coconut milk, and spices, and bring to a simmer. Cover and cook for 1 hour, stirring occasionally.
- 2.Meanwhile, make the sambal goreng telor by frying the eggs in a bit of oil until crispy. Set aside. In the same pan, sauté onion and garlic until softened. Add the chili paste and cook for another minute. Add the fried eggs and stir to coat in the sauce.
- 3.For the tempeh skewers, marinate the cubed tempeh in a mixture of soy sauce, ginger, and garlic. Thread onto skewers and grill or broil until crispy and golden.
- 4.For the green beans, sauté garlic and ginger in oil until fragrant. Add the green beans and cook until tender. Stir in coconut milk and a bit of sambal oelek for heat.
- 5.For the cauliflower rice, pulse the cauliflower in a food processor until it resembles rice. Sauté in a bit of oil until tender. Season with salt and pepper.
