- 1.Boil the lamb brains in salted water for 5-7 minutes, or until tender. Drain and peel off the outer membrane.
- 2.Heat oil in a pan and add onions. Fry until golden brown, then add garlic and ginger. Fry for a minute or two more.
- 3.Add cumin, coriander, turmeric, red chili powder, and garam masala powder. Fry for a minute or two.
- 4.Add chopped tomatoes and fry until the oil separates from the mixture.
- 5.Add the lamb brains and water. Simmer for 10-15 minutes or until the curry has thickened.
- 6.Serve hot over steaming hot rice.
