- 1.In a large bowl, mash the black beans with a fork or potato masher.
- 2.Add the quinoa, mushrooms, breadcrumbs, onion, garlic, cumin, smoked paprika, salt, and pepper. Mix well.
- 3.Form the mixture into 4 patties.
- 4.Heat the olive oil in a large skillet over medium heat.
- 5.Add the patties and cook for 5-7 minutes on each side, until browned and crispy.
- 6.In the same skillet, add the sliced onion and cook for 5-7 minutes, until caramelized.
- 7.To assemble the burgers, spread 1 tbsp of vegan mayo on each bun.
- 8.Top with a patty, caramelized onions, and sliced avocado.
