- 1.Preheat the oven to 400°F (200°C).
- 2.Place the beef bones on a baking sheet and roast in the oven for 30 minutes, or until browned.
- 3.In a large pot, add the roasted beef bones, onion, ginger, star anise, cinnamon stick, cloves, cardamom pods, coriander seeds, and fennel seeds. Fill the pot with water, enough to cover the bones.
- 4.Bring the pot to a boil, then reduce the heat to low and simmer for 2 hours, skimming off any impurities that rise to the surface.
- 5.After 2 hours, remove the beef bones and strain the broth through a fine-mesh sieve into another pot. Discard the solids.
- 6.Return the strained broth to the stovetop and bring to a simmer. Add the sliced beef brisket and cook for 5-7 minutes, or until the beef is cooked through.
- 7.Divide the cooked rice noodles among 4 bowls. Top with the cooked beef brisket slices.
- 8.Ladle the hot broth over the noodles and beef.
- 9.Serve the pho with bean sprouts, fresh basil, fresh mint, fresh cilantro, lime wedges, and optional Sriracha and hoisin sauce on the side.
