- 1.Preheat the oven to 350°F and line a baking sheet with parchment paper.
- 2.In a small bowl, mix together the ground pistachios, cinnamon, and 1/4 cup of honey.
- 3.Lay out one sheet of phyllo dough and brush it with melted butter. Repeat with the remaining sheets of phyllo dough, brushing each layer with butter.
- 4.Spread the pistachio mixture evenly over the top layer of phyllo dough.
- 5.Roll up the phyllo dough, starting at the short end, and place the roll seam-side down on the prepared baking sheet.
- 6.Brush the top of the roll with more melted butter and bake for 20-25 minutes, or until golden brown.
- 7.Remove from the oven and drizzle the remaining honey over the top of the roll.
- 8.Let cool for 10-15 minutes before slicing and serving.
