- 1.Preheat the oven to 350°F (180°C).
- 2.In a large mixing bowl, whisk together the quark, sugar, vanilla extract, egg yolks, cornstarch, and lemon zest until smooth.
- 3.In a separate bowl, beat the egg whites until stiff peaks form. Fold the egg whites into the quark mixture until well combined.
- 4.In a small bowl, mix together the graham cracker crumbs and melted butter until the crumbs are evenly coated.
- 5.Press the crumb mixture into the bottom of a 9-inch (23cm) springform pan. Pour the quark mixture on top of the crust and smooth out the surface.
- 6.Bake for 45 minutes or until the cheesecake is set but still slightly jiggly in the center.
- 7.Remove from the oven and let cool to room temperature before chilling in the refrigerator for at least 2 hours or overnight.
- 8.Serve chilled and enjoy!
