  1. 1.Preheat the oven to 350°F (180°C).
  2. 2.In a large mixing bowl, whisk together the quark, sugar, vanilla extract, egg yolks, cornstarch, and lemon zest until smooth.
  3. 3.In a separate bowl, beat the egg whites until stiff peaks form. Fold the egg whites into the quark mixture until well combined.
  4. 4.In a small bowl, mix together the graham cracker crumbs and melted butter until the crumbs are evenly coated.
  5. 5.Press the crumb mixture into the bottom of a 9-inch (23cm) springform pan. Pour the quark mixture on top of the crust and smooth out the surface.
  6. 6.Bake for 45 minutes or until the cheesecake is set but still slightly jiggly in the center.
  7. 7.Remove from the oven and let cool to room temperature before chilling in the refrigerator for at least 2 hours or overnight.
  8. 8.Serve chilled and enjoy!

lightbulb_outline Tips

  • chevron_rightQuark can be found in specialty cheese shops or online. If you can't find quark, you can substitute it with cream cheese or ricotta cheese.
  • chevron_rightFor a twist on the classic recipe, try adding some fresh berries or a fruit compote on top of the cheesecake before serving.
