  1. 1.Preheat your oven to 400°F (200°C).
  2. 2.Season the beef fillet with half of the salt and half of the black pepper.

  4. 4.In the same skillet, melt the butter and add the mushrooms, garlic, thyme, and remaining salt and black pepper. Cook until the mushrooms release their moisture and become golden brown. Remove from heat and let it cool.
  5. 5.Roll out the puff pastry sheet on a lightly floured surface. Place the cooled mushroom mixture in the center of the pastry sheet.
  6. 6.Place the seared beef fillet on top of the mushroom mixture. Fold the pastry over the beef, sealing the edges with the beaten egg.
  7. 7.Transfer the beef Wellington to a baking sheet lined with parchment paper. Brush the top with more beaten egg for a golden crust.
  8. 8.Bake in the preheated oven for about 25-30 minutes, or until the pastry is golden brown and the beef reaches your desired doneness.
