- 1.In a medium saucepan, combine the heavy cream, whole milk, and sugar. Heat over medium heat, stirring occasionally, until the sugar has dissolved and the mixture is hot but not boiling.

- 3.Strain the mixture through a fine-mesh sieve into a large bowl, pressing on the mint leaves to extract as much flavor as possible. Discard the mint leaves.
- 4.Chill the mixture in the refrigerator until completely cold, at least 2 hours or overnight.
- 5.Churn the mixture in an ice cream maker according to the manufacturer's instructions. During the last few minutes of churning, add the chopped chocolate.
- 6.Transfer the ice cream to a freezer-safe container and freeze until firm, at least 4 hours or overnight.
