- 1.Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- 2.Melt the 200g of chopped dark chocolate in a heatproof bowl set over a pan of simmering water. Stir until smooth and set aside to cool slightly.
- 3.In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- 4.Add the egg yolks, one at a time, beating well after each addition. Stir in the vanilla extract.
- 5.In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the melted chocolate. Mix until just combined.
- 6.In a clean mixing bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the cake batter until no streaks remain.
- 7.Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- 8.Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- 9.Once the cake is completely cooled, carefully slice it in half horizontally using a serrated knife.
