  1. 1.Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. 2.Melt the 200g of chopped dark chocolate in a heatproof bowl set over a pan of simmering water. Stir until smooth and set aside to cool slightly.
  3. 3.In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. 4.Add the egg yolks, one at a time, beating well after each addition. Stir in the vanilla extract.
  5. 5.In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the melted chocolate. Mix until just combined.
  6. 6.In a clean mixing bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the cake batter until no streaks remain.
  7. 7.Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
