Recipes for Coconut Flour that AREN'T Keto focused! I don't like a lot of keto recipe swaps and am not on keto- I'm hoping to find recipes that are about using coconut flour as it is, not replacing carb stuff, ideally.

- 1.In a medium bowl, whisk together the coconut flour, baking powder, and salt.
- 2.In another bowl, whisk together the coconut milk, eggs, and vanilla extract.
- 3.Add the wet ingredients to the dry ingredients and whisk until smooth.
- 4.Heat a non-stick skillet over medium heat. Spoon 1/4 cup of batter onto the skillet for each pancake.
- 5.Cook until bubbles form on the surface of the pancake and the edges start to look set, about 2-3 minutes.
- 6.Flip the pancake and cook for another 1-2 minutes, until golden brown on both sides.
- 7.Repeat with the remaining batter.
