  1. 1.In a shallow dish, combine the cooled espresso or coffee with 1 tablespoon of sugar. Set aside.
  2. 2.In a large mixing bowl, beat the mascarpone cheese, remaining sugar, and vanilla extract until smooth and creamy.
  3. 3.Dip each ladyfinger half into the coffee mixture, making sure to coat both sides. Place the soaked ladyfingers in a single layer in a 9x9-inch dish.
  4. 4.Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
  5. 5.Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight if possible.
  6. 6.Before serving, dust the top of the tiramisu with cocoa powder and sprinkle with grated dark chocolate.
