- 1.Soak the rice noodles in warm water for 15 minutes, then drain and set aside.
- 2.In a wok or large skillet, heat the oil over high heat. Add the garlic and stir-fry for 30 seconds, then add the shrimp and stir-fry until pink, about 2-3 minutes.
- 3.Push the shrimp to one side of the wok and add the beaten eggs. Scramble the eggs until set, then mix with the shrimp.
- 4.Add the soaked rice noodles to the wok and stir-fry for 1-2 minutes, until heated through. Add the bean sprouts and green onions and stir-fry for another minute.
- 5.Pour the Pad Thai sauce over the noodles and toss to combine. Serve hot, garnished with chopped peanuts and lime wedges.
