- 1.In a large pot or Dutch oven, melt the butter and olive oil over medium heat.
- 2.Add the onions and garlic and cook, stirring occasionally, until the onions are caramelized and golden brown, about 45 minutes.
- 3.Add the beef broth, white wine, and thyme to the pot and bring to a simmer.
- 4.Simmer the soup for 30 minutes to allow the flavors to meld together.
- 5.Preheat your oven to 350°F. Arrange the baguette slices on a baking sheet and toast them in the oven for 5-7 minutes, until lightly golden brown.
- 6.Ladle the soup into oven-safe bowls and top each bowl with a few slices of toasted baguette. Sprinkle the shredded Gruyere cheese over the top of the bread.
- 7.Place the bowls on a baking sheet and broil them for 2-3 minutes, until the cheese is melted and bubbly.
- 8.Serve hot and enjoy!
lightbulb_outline Tips
- Be patient when caramelizing the onions - it takes time but it's worth it for the depth of flavor.
- If you don't have oven-safe bowls, you can still make this recipe! Just top the soup with the bread and cheese and broil it on a baking sheet instead.
