- 1.Preheat oven to 350°F.
- 2.In a large Dutch oven, cook the bacon over medium heat until crispy. Remove from pan and set aside.
- 3.Season chicken with salt and pepper. In the same pan, brown the chicken on all sides. Remove from pan and set aside.
- 4.Add the onions, mushrooms, garlic, carrots, and celery to the pan. Cook until the vegetables are tender.
- 5.Add the thyme and bay leaf to the pan. Pour in the wine and chicken stock and bring to a simmer.
- 6.Add the chicken and bacon back to the pan. Cover and transfer to the oven.
- 7.Bake for 1 1/2 to 2 hours, or until the chicken is tender and falling off the bone.
- 8.Remove from the oven and let rest for 10 minutes before serving.
