- 1.Preheat the oven to 325°F. Drain the soaked beans and place them in a large pot. Add enough water to cover the beans by 2 inches. Bring to a boil over high heat, then reduce the heat to low and simmer for 30 minutes.
- 2.Add the duck confit, pork sausage, bacon, garlic, onions, and bouquet garni to the pot. Cover and transfer to the oven. Bake for 3-4 hours, until the beans are tender and the meat is falling off the bone.
- 3.Remove the bouquet garni and discard. Serve the cassoulet hot, garnished with fresh parsley.
