  1. 1.Drain the soaked black beans and rinse them. In a large pot, add the beans and enough water to cover them by about 2 inches. Bring to a boil and then reduce to a simmer. Cook until the beans are tender, about 45 minutes to 1 hour.
  2. 2.In a separate pan, sauté the onion, garlic, carrots, celery, and red bell pepper until they are soft and fragrant. Add the sautéed vegetables to the pot with the beans.
  3. 3.Add the oregano, cumin, smoked paprika, bay leaves, salt, and black pepper to the pot. Stir everything together and let it simmer for another 10-15 minutes.
  4. 4.Remove the bay leaves and serve the feijoada over rice, topped with orange segments.
