- 1.Drain the soaked black beans and rinse them. In a large pot, add the beans and enough water to cover them by about 2 inches. Bring to a boil and then reduce to a simmer. Cook until the beans are tender, about 45 minutes to 1 hour.
- 2.In a separate pan, sauté the onion, garlic, carrots, celery, and red bell pepper until they are soft and fragrant. Add the sautéed vegetables to the pot with the beans.
- 3.Add the oregano, cumin, smoked paprika, bay leaves, salt, and black pepper to the pot. Stir everything together and let it simmer for another 10-15 minutes.
- 4.Remove the bay leaves and serve the feijoada over rice, topped with orange segments.

- If you don't have dried black beans, you can use canned black beans instead. Just be sure to drain and rinse them before using.
- For a little extra heat, add some chopped jalapeño to the sautéed vegetables.
