- 1.In a heatproof bowl, whisk together the egg yolks and sugar until well combined and creamy.
- 2.Place the bowl over a pot of simmering water, making sure the bottom of the bowl does not touch the water.
- 3.Continue whisking the egg yolk mixture over the heat for about 5 minutes, or until it thickens and becomes pale yellow in color.
- 4.Remove the bowl from the heat and set aside to cool slightly.
- 5.In a separate bowl, whip the cream until stiff peaks form.
- 6.In another bowl, whisk together the mascarpone cheese and milk until smooth.
- 7.Gently fold the whipped cream into the mascarpone mixture until well combined.
- 8.In a shallow dish, combine the coffee and rum.
- 9.Dip each ladyfinger into the coffee mixture for a few seconds, then arrange them in a single layer in the bottom of a 9x9-inch dish.
- 10.Spread half of the mascarpone mixture over the ladyfingers, smoothing it out evenly.
- 11.Repeat the process with another layer of dipped ladyfingers and the remaining mascarpone mixture.
- 12.Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight if possible.
- 13.Before serving, dust the top of the tiramisu with cocoa powder.
- 14.Slice and enjoy!
