  1. 1.In a heatproof bowl, whisk together the egg yolks and sugar until well combined and creamy.
  2. 2.Place the bowl over a pot of simmering water, making sure the bottom of the bowl does not touch the water.
  3. 3.Continue whisking the egg yolk mixture over the heat for about 5 minutes, or until it thickens and becomes pale yellow in color.
  4. 4.Remove the bowl from the heat and set aside to cool slightly.
  5. 5.In a separate bowl, whip the cream until stiff peaks form.
  6. 6.In another bowl, whisk together the mascarpone cheese and milk until smooth.
  7. 7.Gently fold the whipped cream into the mascarpone mixture until well combined.
  8. 8.In a shallow dish, combine the coffee and rum.
  9. 9.Dip each ladyfinger into the coffee mixture for a few seconds, then arrange them in a single layer in the bottom of a 9x9-inch dish.
  10. 10.Spread half of the mascarpone mixture over the ladyfingers, smoothing it out evenly.
  11. 11.Repeat the process with another layer of dipped ladyfingers and the remaining mascarpone mixture.
  12. 12.Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight if possible.
  13. 13.Before serving, dust the top of the tiramisu with cocoa powder.
