- 1.In a large pot, heat the olive oil over medium heat.

- 3.Add the cumin and coriander and cook for another minute.
- 4.Add the rice, coconut milk, and 1 1/2 cups of water to the pot and stir well.
- 5.Bring to a boil, then reduce the heat to low and cover the pot.
- 6.Simmer for 18-20 minutes, or until the rice is tender and the liquid has been absorbed.
- 7.Stir in the black beans and cilantro.
- 8.Season with salt and pepper to taste.
- 9.Serve with lime wedges on the side.
