- 1.In a large bowl, whisk together the garlic, ginger, allspice, thyme, and scallions. Add the chicken and toss to coat. Cover and refrigerate for at least 1 hour, or overnight.
- 2.Preheat a grill to medium-high heat. Remove the chicken from the marinade and grill until cooked through, about 5-6 minutes per side.
- 3.Meanwhile, in a medium saucepan, bring the coconut milk to a boil. Add the rice and stir to combine. Reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the liquid has been absorbed.
- 4.To serve, spoon the rice onto a platter and top with the grilled chicken. Sprinkle with cilantro and serve with lime wedges.
