- 1.Preheat the oven to 375°F.
- 2.In a large bowl, cream together the achiote paste, butter, and sugar until light and fluffy. Beat in the eggs and vanilla extract.
- 3.In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the flour mixture to the butter mixture, alternating with the milk, until a smooth dough forms.
- 4.On a lightly floured surface, roll out the dough to 1/8-inch thickness. Cut out circles using a 3-inch cookie cutter.
- 5.In a small bowl, mix together the apricot preserves and cinnamon. Spoon a small amount of the mixture onto each dough circle, then fold the dough over and press the edges together to seal.
- 6.Place the empanadas on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until golden brown.
- 7.Remove from the oven and let cool slightly. Dust with powdered sugar and serve warm.
lightbulb_outline Tips
- For a more intense achiote flavor, add an extra tablespoon of achiote paste to the dough.
- If you don't have apricot preserves, you can substitute any other fruit preserves you like.
